Time Crunch Munches

Matt’s Favorite Hot Cocoa

1/3 cup cocoa powder

3/4 cup sugar

pinch of salt

1/3 cup boiling water

4 1/2 cups milk (I use whole)

1/4 tsp vanilla

Combine cocoa, sugar and salt in a saucepan on medium heat. Blend in water and bring to a boil for two minutes. Lower heat to simmer and continue to stir. Add the milk and continue stirring. Remove from heat and add vanilla. If you find the taste too sweet, continue adding milk until it’s perfect for you!

 

QUESADILLAS (Non-torched!)

Quesadillas are an easy meal when time is short. I have used a variety of fillings, largely dependent on what is in the fridge at the moment!

You will need:

Butter or oil (optional)

Flour tortillas

Fillings such as chopped or ground chicken, pork, beef, beans, sautéed veggies (onion, pepper, zucchini, squash, etc.)

To begin:

Warm fillings in microwave or skillet.

Butter your pan. ( I didn’t say these were low calorie!)  You can use oil or forgo the butter/oil altogether if you have a good non-stick pan. But we love the flavor and golden brown toast that butter lends!

Place flour tortillas in the pan and top with a layer of cheese. Cheddar, Mexican, pepper jack….your choice!

Allow cheese to melt and then add your chosen fillings to half of the tortillas.

Give these a couple minutes to warm up, then lay one cheesy tortilla over one filled tortilla. Let the cheese squish (fancy cooking term) throughout.

Remove from heat. Allow to cool for a few minutes. Cut with sharp knife or pizza cutter (my preference) into quarters.

We enjoy ours with sour cream and guacamole and prefer the flavor when they have not been torched. (See previous post.)
